Gum is derived from guar seeds or cyamopsis tetragonoloba termed as Guar Gum. Guar Gum can also be termed as Guaran. These seeds have high low-shear viscosity as evaluated with other hydrocolloids. Guar gum is the best stabilizing agent that is generally derived from cluster or guar beans which is largely produced in India. As a country, India Ranks First in the production of guar, which is grown in the North Western part, which mainly includes the states of Haryana, Gujarat, Rajasthan and Punjab.

Guar Gum is relatively cost effective as compared to other thickeners and stabilizers along with it being an effective binder, plasticizer and emulsifier. One of the important properties of guar gum, a polysaccharide, is that it is high on galactose and mannose. The crude Guar Gum is a greyish-white powder 90°k of which dissolves in water.

Guar has now assumed a larger role among domesticated plants due to its unique functional properties. Guar gum has eight times more thickening properties as compared to corn starch.


The benefits of guar beans are just the endless. This ingredient is used as a gelling agent, viscous and concentrating agent and binder in thefood industry i.e. in the production of ice cream, drinks, chocolate milk, pudding, jam, cakes & confectionary, bread, biscuits, mayonnaise and pasta. It is also used in different industries like pharmaceutical, chemical, textile, cosmetics etc.

Guar Gum Powder Application

Guargum is a valuable ingredient in multiple products, with multiple applications. It is extensively preferred in food industries. It is used in ice-creams to control the growth of crystals, moisture, and its freezing point. It imparts softness and sponginess to bakery items. It is also used in bakery products, like- bread, cake, pastry as a binding agent.

It exhibits excellent binding properties and hence it is used in the paper industry. The addition of Guarkernmehl increases the tensile strength of the paper.
